Homemade Cheese Crackers

My son is a lover of cheese....just like his mom! ;)  His favorites in particular are mozzarella string cheese and he especially loves himself some shredded cheddar cheese. It's one of his favorite snacks besides bananas and frozen peas/carrots. A little while back I made him a big batch of homemade graham crackers and he gobbled them up. These cheddar crackers are a combination of his two favorite things - crackers and cheese!


A while back I was watching an episode of The Pioneer Woman on Food Network where PW was making a care package for her daughter which included homemade cheddar crackers. I knew the moment I watched the episode that Nolan would love them! I just made a few adjustments to the ingredients to make it a bit more baby friendly and they turned out wonderfully. He and I ate the entire batch of crackers before the end of the day.

I can't tell you who like them more....Nolan or me!


The best part is that the crackers couldn't be an easier to make. Just combine all the ingredients (except the water) in the food processor....


Pulse it a few times until it resembles coarse sand....


Now add the water to the bowl of the food processor and continue to pulse until it forms into a ball. Wrap in plastic wrap and chill for 2 hours.


On a lightly floured surface, roll the dough out to 1/4-inch thickness. Then using a sharp knife or pizza cutter, cut the dough into little squares.

 
Transfer to a baking sheet and bake for 15 minutes at 350 degrees (F) until puffed and golden brown. Wait until they have cooled completely before storing in an airtight container for up to 1 week. Enjoy!
 
 
Homemade Cheddar Crackers
Servings: 3 (approx. 72 crackers)
  • 4 ounces freshly grated Mild or Sharp Cheddar Cheese
  • 1/2 cup All-Purpose Flour
  • 2 tablespoons Salted Butter
  • 1/2 teaspoon Seasoned Salt (Lawry's)
  • 2 tablespoons Cold Water
Place all the ingredients, except water, in a food processor and pulse until the mixture resembles coarse sand. Now add the water to the bowl of the food processor and continue to pulse until it forms into a ball. Wrap in plastic wrap and chill for 2 hours.
 
Preheat the oven to 350 degrees (F) and line a baking sheet with non-stick mat or parchment paper.
