Brown Eyed Susan's


These are Dusty's favorite Christmas cookies of all time!
Me....I've never heard of these until Dusty surprised me and made them for me the other night.
Why did I not know about these???



They are so cute, tiny and taste like a shortbread cookie!
Plus they melt in your mouth! 
YUM!


Here is what you are going to need for the cookies:
-1 cup Butter
-3 tbsp Sugar
-1 tsp Almond Extract
-2 cup Flour
-1/2 tsp Salt

They are super simple to make!

Combine all the ingredients into a bowl and mix till combined.
Chill for 1 to 2 hours in the fridge.
Preheat the oven to 400.
Form into 1/2 tbsp sized balls and bake for 10 minutes until bottoms turn slightly brown.
Transfer cookies to wire rack and allow them to completely cool.

For the Chocolate Frosting....aka the "Brown Eye"
-1 cup Powdered Sugar
-2 tbsp Cocoa Powder
-1/2 tsp Vanilla Extract
-2 tbsp Hot Water

Add all the ingredients into a mixing bowl and blend well with a hand mixer/whisk until combined.
Don't worry, the frosting is suppose to be thin!

Now to make the cookies:
Take your completely cooled cookies and dip the tops of them into the chocolate frosting.
Place the cookies on some parchment paper or wax paper until the chocolate hardens.

That's it! Super easy and yummy!
They don't even have to be stored in anything to keep them from going stale or hard. They can just sit out on a serving dish, look pretty and taste great!
