Crispy Yogurt Chicken

If you weren't excited enough about using chicken thighs in the last recipe, you are in luck because we are using them again in this recipe!

Don't worry though, with this recipe you can use any type of chicken you want: thighs, legs or breasts! The only reason I am using chicken thighs again is because I only cook for two people and the grocery store only sells items in packs of four or more. It kind of reminds me of George Banks from Father of the Bride buying hot dog buns...

Therefore, Dusty and I are stuck having two chicken dishes in a row!

I really enjoyed this recipe a lot. It's a different and healthier take on fried chicken and has a great creamy taste to it. It was very tasty!

Here is what you need for 2 people:
-2 cup Panko Bread Crumbs
-2-6oz containers of Plain Yogurt
-2 cloves Garlic-minced
-2 tsp dried Parsley
-Juice of 1 Lemon
-2 Chicken Thighs
-1 tbsp Butter + more for greasing your baking sheet

Preheat the oven to 350 degrees.
Mix together the yogurt, garlic, parsley and lemon in a bowl.

Then rinse the chicken thighs, remove the skin and pat them dry with a paper towel. It is very important to dry the chicken because otherwise the yogurt mixture won't stick to the chicken as well. Then lightly salt the chicken thighs on both sides.

Take a little bit of butter and grease your baking sheet so the chicken won't stick to the pan.

Here is the mechanism:
One at a time with the tongs, dip the chicken thighs in the yogurt mixture until thoroughly covered and then place them in the Panko Bread Crumbs and roll them around until they are also thoroughly covered as well.

Place them on the greased baking sheet and place 1/2 tbsp butter on top of the chicken. This will prevent the chicken from drying out from the Panko Bread Crumbs.

Wrap the baking sheet with aluminum foil and bake for 1 hour. After 1 hour, remove the foil and bake for an additional 10 minutes so the crumbs can crisp up a bit. Serve with a salad and enjoy!
